1 You know that pancakes have been alive for more than a thousand years, from the very ab ovo, so to speak, of ancient Slavdom... from the egg, from the moment of origin... (Lat.). They came into this white world before Russian history did, they have outlived it entirely from its beginning to its very last page, and it lies beyond all doubt that they were invented, just as the
samovar was, by Russian brains... In anthropology they ought to occupy as honorable a place as the three-fathom fern or the stone knife; and if we still have no scholarly works on the subject of pancakes, that is explained simply by the fact that it is far easier to eat pancakes than to rack one’s brains over them...
2 Times pass and the ancient customs, garments, and songs of
Rus vanish little by little; much has already vanished and holds only historical interest, and yet such nonsense as pancakes occupies as firm and well-worn a place in the contemporary Russian repertoire as it did a thousand years ago. And no end to them is in sight in the future either...
3 Considering the venerable antiquity of pancakes and their extraordinary, centuries-attested steadfastness in the struggle against innovation, it is vexing to think that these tasty rounds of dough serve only the narrow ends of cookery and gluttony... It is vexing both for their antiquity’s sake and for the sake of their exemplary, positively Spartan steadfastness... Truly, the kitchen and the belly are not worth a thousand years.
4 As for myself, I am almost certain that these voluble old pancakes, apart from cookery and gormandizing, have other, further ends as well... Beneath the heavy, hard-to-digest dough there is hidden something still higher, something symbolic, perhaps even prophetic... But what, exactly?
5 I do not know, and I never shall. This has been and remains to this day a deep, impenetrable feminine secret, as hard to get at as it is to make a bear laugh... Yes, pancakes, their meaning and their purpose – this is a woman’s mystery, a mystery that no man is likely to learn any time soon. Someone write an operetta about it!
6 Since prehistoric times the Russian woman has sacredly guarded this secret, passing it down from generation to generation only and exclusively through daughters and granddaughters. If, God forbid, even a single man should ever learn it, something would happen so terrible that even the women themselves cannot imagine it. Neither wife, nor sister, nor daughter... not one woman will betray this secret to you, however dear you may be to her, however low she may have fallen. The secret cannot be bought or bartered. A woman will not let it slip, not in the heat of passion, not in delirium. In a word, it is the one secret that has managed, over the course of a thousand years, never to sift through so fine a sieve as the fair sex!..
7 How are pancakes baked? Unknown... Only the distant future will find this out; we, meanwhile, without arguing and without asking, must eat what is set before us... This is a mystery!
8 You will say that men bake pancakes too... Yes, but men’s pancakes are not pancakes at all. Cold breathes from their nostrils, on the teeth they give the impression of rubber galoshes, and in flavor they lag far behind women’s pancakes... The male cooks must retreat and admit themselves defeated...
9 The baking of pancakes is an exclusively feminine affair... The cooks ought long ago to have understood that this is no simple matter of pouring liquid batter onto hot skillets, but a sacred rite, an entire complex system with its own beliefs, traditions, language, superstitions, joys, sufferings... Yes, sufferings... If
Nekrasov said that the Russian woman has suffered greatly, then pancakes are partly to blame for it...
10 I do not know in what the process of baking pancakes consists, but the mysteriousness and solemnity with which a woman surrounds this sacred rite are somewhat known to me... There is much that is mystical here, fantastical, even spiritualistic... Watching a woman baking pancakes, one might think she was summoning spirits or extracting the philosopher’s stone from the dough...
11 In the first place, no woman, however enlightened she may be, will ever on any account begin to bake pancakes on the thirteenth of the month or on the eve of the thirteenth, on a Monday or on the eve of a Monday. On those days the pancakes do not turn out. Many quick-witted women, in order to get around this, begin baking pancakes well in advance of
Butter Week, so that the household is thereby given the chance to eat pancakes on Butter Monday and on the thirteenth all the same.
12 In the second place, on the eve of the pancakes
the lady of the house always whispers about something mysterious with
the cook. They whisper and look at each other with the sort of eyes one might use while composing a love letter... After the whispering, the kitchen boy
Yegorka is usually sent to the shop for yeast... The lady of the house then looks for a long time at the yeast that has been brought, sniffs it, and, however ideal it may be, is bound to say:
13 "This yeast is no good at all. Go on, you wretched boy, tell them to give you a better lot..."
14 The boy runs off and brings back new yeast... After this a large earthenware jar is taken and filled with water, in which the yeast and a little flour are dissolved... When the yeast has dissolved,
the mistress and the cook turn pale, cover the jar with an old tablecloth, and set it in a warm place.
15 "Now mind you don’t oversleep,
Matryona..." whispers the mistress. "And see that the jar stands in the warmth the whole time!"
16 After this comes a restless, agonizing night. Both the cook and the mistress suffer from insomnia, and if they do sleep, they rave and see terrible dreams... How fortunate you men are, that you do not bake pancakes!
17 No sooner does the gloomy morning begin to gray outside the window than the mistress, barefoot, disheveled, and in nothing but her shift, comes running to the kitchen.
18 "Well, what? Well, how is it?" she pelts Matryona with questions. "Eh? Answer me!"
19 And Matryona already stands by the jar, pouring buckwheat flour into it...
20 In the third place, the women keep strict watch that no one from outside, and none of the men of the household, should enter the kitchen while the pancakes are being baked there... The cooks will not let even the firemen in at such a time. One must not enter, must not look, must not ask... And if someone should peep into the earthenware jar and say, "What lovely dough!" – then one might as well pour it all out, for the pancakes will not turn out! What the women say while the pancakes are baking, what incantations they recite – this is unknown.
21 Exactly half an hour before the moment when the batter is poured onto the skillets, the cook, flushed and already worn out, pours a little hot water or warm milk into the jar. The mistress stands right there, wanting to say something, but under the influence of a sacred dread she cannot get the words out. And the household, meanwhile, awaiting the pancakes, pace through the rooms and, watching the face of the mistress as she keeps running back and forth to the kitchen, think that someone in the kitchen is either giving birth or, at the very least, getting married. But at last the first skillet hisses, then a second, a third... The first three pancakes are waste paper, fit only for Yegorka to eat... but the fourth, the fifth, the sixth, and so on are laid on a plate, covered with a napkin, and carried off to the dining room to those who have long been thirsting and hungering for them. The mistress herself carries them in, flushed, radiant, proud... One might think that what she holds in her hands is not pancakes but her firstborn child.
22 Now, how do you explain this triumphant look? By evening the mistress and the cook, from exhaustion, can neither stand nor sit. They wear a look of suffering... It seems that just a little more, and they will give up the ghost...
23 Such is the external side of the sacred rite. If pancakes were intended exclusively for the base ends of gluttony, then you must agree, this mysteriousness, this night I have described, these sufferings, would all be inexplicable... Evidently there is something more, and this "something" is carefully hidden.
24 Looking at the ladies, one is nonetheless bound to conclude that in the future pancakes are destined to resolve some great, world-historical problem.
